Scientific Name: Pleurotus Eryngii

Common Names: king trumpet mushroom, French horn mushroom, king oyster mushroom, boletus of the steppes, trumpet royale

Growing Temperatures: Fruits Between 55-72° F.

P. Eryngii is the largest species in the oyster mushroom genus. It has a thick, meaty white stem which is fully edible, and a tan cap.

This mushroom grows in clusters or single large specimens developing a trumpet-like shape and appearance. The Eryngii has a different cap type than other Pleurotus, having a flat thick cap above and a dense meaty white stem beneath with a firm and crunchy textured flesh from the base to the cap. The fat, dense stems can be sliced into circular pieces and cooked until crispy.

The King Oyster is typically harvested when the stems reach a length of several inches, but can grow to a size of 6 to 8 inches in length. Caps are usually not as wide as other Oyster species but it is definitely one of the thickest. Cap size usually 7 to 10 cm diameter.

It is fast to fruit in the right conditions with a good yield. It prefers sterilized sawdust and grain as a substrate although it can be even fruited in PF style rice cakes rather easily with moderate success.

This strain is becoming popular thanks to their strong texture, delicious aroma and good preservation.
