A favorite of the Japanese and many Midwest USA mushroom hunters,The Cinnamon cap Mushroom (Hypholoma sublateritium) produces pinkish colored mushrooms with flaky caps. This aggressive mushroom colonizes quickly and produces abundantly on large wood substrates and inoculated logs. This is an excellent species to naturalize in your backyard. The logs can be partially buried 1/4 to 1/2 way underground to collect moisture from the ground. Nutty flavored and delicious with red wines!
